How to Assemble a Make Now & Eat Later Lunch

Every week, I make a gigantic batch of sticky chicken (10 pieces for myself) and 2-3 veggie side dishes. Each meal then follows the same (predictable but delicious!) formula:

1 Meal = Sticky Chicken + Veggie Sides (x2-3) + Fresh Salad

The Sticky Chicken recipe will be posted soon! And I will start uploading the veggie side recipes next week.

For the fresh salad, I usually use:

  • lettuce (green leaf, or red Boston)
  • arugula
  • avocado
  • tomatoes
  • cucumber
  • sweet peppers (red or yellow)

Occasionally, I add a scoop of ricotta cheese, a few fresh dates, or sugar snap peas.
